happy friday! i cannot believe that the week is already almost over. time flies when you're having fun...or just incredibly busy. last night was the only night this week where i didn't have something planned and it was so nice to come home and veg on the couch. tex had to be at school late and i am going to be honest - it was kind of awesome to have the apartment to myself for a while. i missed him but sometimes i need a little molly time and i had that in spades last night. speaking of tex - his brother is in town this week so we've been seeing his family a lot and it makes me really happy to have them so close. at the same time it makes me miss my family like crazy. i'm heading to chicago at the end of september for my cousin's wedding and i really cannot flipping wait to see most of them. anyway, the week was busy but it was a good one, so here's what i've been up to.
do you ever make something that's so simple but ends up being so OMG delicious you just want it again and again? i had some leftover chicken strips from enchilada pockets that i made for dinner one night - ps tex LOVED these and they're going in the rotation regularly now - and i was in a hurry to throw something together for dinner tuesday. i made a few chicken tostadas and ate them with my leftover fajita peppers and onions. i realized we didn't have salsa and i didn't have time to make any type of sauce so i just rolled with plain chicken, cheese and red pepper flakes. i toasted the tortillas first them piled on the toppings and put them back in my toaster oven so they got melty and dear lord, i forgot how much i love the basics. don't worry, there were plenty of veggies on the side to sort of balance out all the cheesy goodness.
my molly night included dinner at the coffee table. tex and i have been eating every night at our dining room table and i love it because it makes the meal feel a lot more like a meal, but i was all nostalgic for my coffee table dinners of yore. i made a greek style burger (ground beef, feta, roasted red peppers, oregano, salt & pepper) and a side of accidentally extra roasted brussels sprouts. i don't know what it was but i will be extra roasting my sprouts from here on out. they were SO good this way. and i'm not totally crazy either because when i posted this in the instagram several other people agreed that they're best a little burnt. yum. toss them in olive oil, salt & pepper and roast 400 degrees for 45 minutes (or until black, whatever comes first).
a recipe that was less of a success...do you ever come across recipes on HLBs and think that you might as well try them out even though they're not something you'd normally eat? well i have a ton of chia seeds and i decided i'd try chia seed pudding for dessert last night. i put it together in the morning following a recipe similar to all the ones out there and i don't know what magic i expected to happen but everyone makes it seem like it quadruples in volume when those chia seeds soak up the almond milk...ummm, am i doing it wrong? i think i ended up with approx 3 tablespoons of "pudding"...which was really just a gloopy mess. i ate it on top of a peach and then i had two huge bowls of cereal because that's a recipe that never fails.
especially when it's simply maize. this is my latest kashi love. i've had it before but for some reason lately it has been the BEST. hitting the spot completely.
still all over that smoothie train for breakfast, still waking tex up at 5 am with the soothing sounds of my vitamix. whatever, he doesn't have school today so i blended extra long today just out of bitterness. this has been my favorite combo lately, ever since i found the triple berry frozen berry blend at target. no strawberries in my smoothies!
berry almond yogurt smoothie
1 cup frozen berry blend
handful of ice
1 scoop protein powder (i was using vanilla almond til i ran out, now it's just vanilla)
sweetener to taste
1/2 tsp almond extract
1 T almond butter
1/2 cup of plain greek yogurt
1 cup unsweetened vanilla almond milk (or any other milk/water depending on what you like)
giant handful of spinach
blend it until it reaches the consistency you like. i actually like mine a bit thinner so i blend for quite a while (also decrease the amount of ice you use or eliminate altogether for a thinner consistency). this smoothie is HUGE so you'll probably need a large bowl or cup or both if you make it. i top my bowl with cereal, typically kashi go lean crunch.
i am super excited for this weekend because we're going out for mexican tonight and then hitting up a few bars with tex's brother and then we're having people over tomorrow to watch the notre dame game. i am my mother's daughter to a t so i've got a pretty big spread planned. it's going to be an amazing weekend including zero healthy choices and i cannot wait. hurry up friday!
