monday brain dump

another monday already? blah. that's how i feel most mondays but at least i'm going into this one feeling prepared for the week. i did a lot of work for school yesterday and for the first time in a while i'm not feeling like i'm playing catchup before my week has even begun. i guess i'm getting back into the swing of things after the christmas holidays...finally. in an attempt to continue looking at the positives when it came to canceling the much anticipated visit from caitlin, i think i probably got a lot more work done yesterday than i would have otherwise AND i got to veg in front of a law and order marathon for a solid few hours last night which was really relaxing. despite having quite a low key weekend, i don't have a lot of coherent thoughts rolling around so i think a brain dump/weekend recap are in order.


1. m&ms are so good. i will always be extremely partial to peanut m&ms but friday afternoon when i was feeling pretty crappy about life (rough day at work, bummed about caitlin, etc.), the 7-11 i went to only had peanuts in the sharing size and frankly i didn't think my willpower could withstand the temptation and i didn't really want to eat the whole bag myself. tear n' share? more like tear n' make yourself sick. so i opted for the normal sized bag of pretzel and they were glorious. i miss almond m&ms though - do they make those anymore? if so, can someone send them to me? i can't find them anywhere.


2. i like eggs all the time but eating them in the middle of the day is such a treat. i spent all day saturday after my run at home and when i wanted a snack in the afternoon nothing sounded quite as good to me as some eggs on a bagel. luckily i had eggs and i had a bagel, so i put the two together and i had myself a snack. doused in cholula? nothing better than that. 


3. I'M BACK, BITCHES! after some really disastrous baking adventures, i finally made something successful. dreamy coconut sour cream muffins anyone? i had some sour cream on hand and i don't use it often (typically i opt for topping my tacos, etc. in greek yogurt because it makes me feel healthier about myself) so i knew i should try to get rid of it before it went bad. i was googling around for sour cream coffee cake recipes but i didn't have enough to make a whole cake. when i stumbled upon the above recipe it seemed too good to be true - i had all the ingredients on hand and these were made within short order. two were eaten while they were still warm and let me tell you - they're crispy on the outside from the coconut flakes and coconut oil and moist and perfect on the inside from the sour cream. if you like coconut make these, post haste. 


4. i cannot get enough of this salad. chickpeas, grapes and feta is my new jam when it comes to salads. good thing grapes come in HUGE bags so i have an excuse to keep making this deliciousness. 


5. i could run with this girl for days. it was cold saturday, the trail we were running on was covered in snow (at least on the way out anyway...miraculously it melted on our way back which made it far more pleasant) and my stomach wasn't feeling the hottest from several margaritas and a boatload of mexican food the night before, but somehow our 8-miler went by without too much difficulty. i love the social aspect of running and jess is one of the best running buddies out there. 


6. the pancakes i had for breakfast yesterday while out at a diner with this gal looked nothing like the above pancakes. firstly, they weren't covered in mashed banana and pb2 syrup. secondly, they weren't burned.  thirdly, they had a side of bacon and someone else made them for me. for all of those reasons (except maybe the first), they were far superior to those pancakes. and the company was better too since i ate the one's pictured above by my damn self before school one morning. i would like to spend every sunday morning running and then having breakfast with alex, please and thank you. i got in another 8-miler sunday for really no reason besides it felt nice to be outside. will i regret this decision when i can't do all the bootcamp workouts this week because my legs are too sore? probably. did i regret it while out in the fresh air? not for a moment. sometimes you just gotta run, ya know?

  2. Ahhhh you guys went to a diner? Mannn I knew I should have woken up early and dragged my butt into DC for the day ;) I went to a diner too eating pancakes, so it's practically like we were there together anyways. Great runs this weekend!
    Also, I'm back, bitches?

  3. Bahahaha i'm still dying from the "I'n back bitches!" I just book marked that recipe because it sounds amazing and i love coconut and muffins...#winning. I'm glad that you were able to get well prepared for the week AND have some fun despite not having our expected weekend! Hopefully happens soon!

  4. Chocolate - there's nothing it can't fix. Okay, maybe it doesn't do so well with leaky faucets and flat tires, but when it comes to dealing with funks, chocolate is kind of amazing. And speaking of which, holy.wow do those muffins look good. I remember seeing them on IG and maaaaaaybe drooling a little. Maybe ;) My weekend involved a batch of chocolate chip oatmeal cookies that I've kind of made 3 times in the past couple of weeks, so I'm thinking it's time to branch out and try something new. Muffins sound like the perfect optin.

  5. My weekend was quiet but good. Had a girls night Friday night, cheered on some friends at a half on Saturday, and got in some good running!

    Pretzel m&m's are my favorite unless I'm out running errands with my mom, then it's all about the shared peanut m&m's :).

  6. my mom LOVES pretzel m&ms! i've never been into m&m's but they are her kryptonite.
    holy moly those are some GORGEOUS girls!
    your eats look great. i don't really like grapes but feta in salads rocks. as does banana and PB, omg the pancakes! checking out the coconut muffin recipe asap.

  7. it was the company. I can probably assure you that. it made the coffee, bacon, pancakes and eggs look way better than they actually were. but in reality i hate that now I have Molly withdrawal, real life problem. how do I deal with it?

  8. So since I don't, as it turns out, have coconut or sour cream on hand, you want to just send me some of those muffins? That sounds like a good plan to me.

    Also, pretzel M&Ms are my jam. Well, my M&M jam. To be honest, I don't buy candy that much (ever) because I'm much more interested in consuming my sweets in the form of baked goods, but when I DO buy M&Ms, pretzel M&Ms are usually my go-to. Looooooooove.

  9. I am a sucker for M&Ms, especially the peanut butter ones. I cannot buy them because I can't control myself around them. The pretzel ones are really good too! Oh, and they DO still make almond M&Ms ;).

  10. Holy Shit (pardon my language), those muffins... oh man they sound good!!! Since I'm feeling under the weather with a stupid stomach bug, I think these may have to be made today. I mean muffins are considered carbs, and aren't carbs good for upset tummies?? :) :)
